A bird flu outbreak in Victoria has caused an egg shortage.

Egg farmers are reassuring everyone that there’s no egg shortage, even though Coles has put a two-carton limit on egg purchases due to an avian flu outbreak in Victoria.

The bird flu strains H7N3 and H7N9 were detected on several farms in western Victoria, leading to over half a million chickens being euthanised to stop the spread.

As a result, Coles has set a limit of 24 eggs per customer, except in Western Australia. They’ve said this is temporary but haven’t specified how long it will last.

“We’re working closely with our suppliers to keep eggs available for our customers and supporting the industry as it deals with the avian flu cases in Victoria,” said a Coles spokesperson.

For families who regularly enjoy eggs, this might be a bit of a hassle. But don’t worry, you’re in luck! The handy chart below provides seven fantastic substitutes for eggs in baking.
