Easter bunny tartlets recipe

Easter bunny tartlet


Prep time: 15 mins plus 15 mins freezing time
Cooking time: 10-15 mins
Makes 12

Ingredients

2 sheets ready-rolled frozen puff pastry, partially thawed
½ x 250g tub spreadable cream cheese
1 tsp all-purpose seasoning
1 tsp sesame seeds
Salt and pepper, to season 
Savoury toppings, to serve – we topped ours with two flavour combos; 1) Smoked salmon, cucumber and micro herbs, 2) Crispy bacon, avocado, chilli jam and micro herbs.

What you do:

1. Place one sheet of pastry onto a clean, dry chopping board. Spread 1 ½ Tablespoons of the cream cheese in a thin layer, all the way to edges. Sprinkle seasoning and sesame seeds over the top. Place the second pastry sheet on top, pressing down firmly. Use the tip of a fork to crimp the edges, sealed. 

2. Cut square into 12 strips. To do this, cut pastry square in half to form 2 rectangles. Cut each rectangle in half again to create 4 rectangles, then cut each into three strips to form 12 strips in total.  

3. Working with one strip at a time, turn the strip on its side so the filling is visible. Bend it around to form a ‘U’ shape. Pinch together, around half way up forming a circle at the base. Bend the top pastry ends outwards and down to create floppy bunny ears. Transfer to a baking paper lined tray. Repeat with remaining pastry strips. Freeze for at least 15 minutes or overnight if more convenient, until pastry is firm again.

4. Arrange 4-6 bunnies, in a single layer, in the basket of the Philips XXL airfryer with Smart Sensing Technology. Set temperature to 200°C and time to 5 minutes cooking until puffed and golden. Remove from the basket and set aside on a serving platter. Repeat this step with remaining bunnies. 

5. Spoon remaining cream cheese into the circle of each pastry. Top with your choice of savoury toppings. 

6. Serve with a sprinkle of salt and freshly ground black pepper.

COOK’S TIP – You’ll fit between 4-6 bunnies in a single layer in your Airfryer basket. It just depends on how much room your individual bunny ears take up.

AIRFRYER CRISPY BACON – Place a couple of rasher of bacon into the basket of the airfryer. Set temperature to 200°C and time to 7 minutes cooking until crispy.

Cooking time: 18 mins
Makes 9

Ingredients

100g dried pitted dates, roughly chopped 
125ml water
½ tsp bicarbonate of soda
¼ cup extra virgin olive oil, light in flavour
1/3 cup brown sugar, firmly packed
1 free-range egg, lightly beaten
1 cup coarsely grated carrot, firmly packed into the cup
1 Tbsp nut or oat milk 
¾ cup plain flour
¼ cup cocoa powder
2 tsp baking powder
1 tsp ground cinnamon
Icing sugar, to dust

What you do:

1. Put dates and water in a small saucepan and bring to the boil. Simmer for 2 minutes, stir in bicarb then remove from heat. Set aside for 20 minutes to cool. Mash well.

2. Put olive oil and sugar in a large bowl and whisk until combined. Add egg and whisk again. Stir in carrot, date mixture and milk. 

3. Sift in flour, cocoa, baking powder and cinnamon. Stir until smooth. 

4. Place 9 silicone muffin cups into the basket of the Philips XXL airfryer with Smart Sensing Technology. Spoon batter evenly into cups. Set the temperature to 160°C and time to 15 minutes. Transfer to a wire rack to cool.

5. Serve muffins warm or at room temperature dusted with a little icing sugar, adorned with an Easter decoration.
