The humble pavlova has become a beloved Christmas tradition across Australia and New Zealand but they can often be harder than you might think to perfect.
The ideal pavlova features a crisp exterior and soft, marshmallow-like interior. Want to know a hot tip for getting your pav just right? Use an air fryer! It’s quick, efficient, and creates the perfect pavlova.

Air fryer Christmas pavlova recipe
Preparation time: 20 mins plus cooling time
Cooking time: 45 mins
Serves: 6-8
Ingredients:
3 x-large egg whites
3/4 cup caster sugar
3 teaspoons cornflour
½ teaspoon vanilla extract
whipped cream, chopped watermelon, sliced strawberries, raspberries and blueberries, to serve
Method:
1 Beat egg whites in a large bowl using an electric hand beater until stiff peaks form.
2 Beat in caster sugar, adding about 2 tablespoons at a time until all sugar has been incorporated. The mixture should now be smooth and very thick. Use your fingertips to test to see if the mixture is smooth – If still grainy, continue to beat until smooth when tested. Add cornflour and vanilla and beat again until incorporated.
3 Cut out a disc of baking paper approx. 20cm in diameter and place it in the basket of the Philips XXL 5000 Series Airfryer. Spoon meringue mixture on to the baking paper, leaving 1 1cm border, and use the back of the spoon to create decorative swirls.
4 Set temperature to 110°C and time to 45 minutes. Allow the cooked meringue to cool completely in the closed Airfryer.
5 To serve, top with cream and fruit. Serve immediately.
Cooking tips
Use ‘x-large’ eggs from a 700g egg carton. Use eggs that are at room temperature.
You can cook the meringue nest the day before. Ensure that it is completely cool before storing in an airtight container at room temperature.
